You might also have a sandwich toaster hidden somewhere in your cupboard just like me. I used to eat lots of bread and make greasy cheese sandwiches. But since I’ve cut out sandwich bread from my diet it’s just been sitting there, collecting dust.
But today I took it on a ride to unknown territories. I got the idea to make a new type of sandwich – namely the kind you replace the bread with eggplant.
Simple as can be, quick and healthy! What more do you want?
- One sandwich toaster
- One eggplant
- Healthy filling (for this I used fresh kale and leftover from last night’s dinner in form of some grilled fish)
- A bit of cheese
- Coconut oil
Cut the eggplant on the long length – I cut away some of the black skin to make it more like a ‘real’ sandwich. Add the coconut oil to one side of the eggplant (the side turning towards the sandwich maker). Dress your sandwich as you like and stick it into the sandwich toaster.
Let it cook for 5-10 minutes, simply take out and eat! Simple and easy way to get lots of veggies – enjoy 💚
