• 250g frozen green peas
• 20g almonds
• 2 table spoons good quality virgin olive oil
• 2 table spoon cream cheese or ricotta
• 20g freshly shredded Parmesan cheese
• 8 fresh mint leaves
• Himalayan salt, freshly grind pepper, lemon juice, and wasabi pure to taste
Always use high-quality cold-pressed oils when you don't heat the oils. Your body need the vital fat to build up your cells and for vital body functions. But beware. Low-quality oils like canola, corn or soybean oil are a ticking bomb under your health. Don’t touch it!
Start with thawing the frozen green peas. Best way to do this, preserving the nutrients is simply to leave them in a bowl on your kitchen table for 30 minutes.
In the meantime, roast the almonds slightly on a dry skillet until slightly golden.
Blend the thawed green peas in a blender adding olive oil, roasted almonds, cream cheese, Parmesan and mint leaves. Blend until you have a coarse puree. Add salt, ground pepper, lemon juice and wasabi.
